Bless Me Father for I Have Tofued

I have a confession.  I just ate tofu, and I liked it.  Wasn't that a Katy Perry song?  "I ate tofu, and I liked it.  The taste of . . . " No, wait, that wasn't the way the song went.  Well, that doesn't change the fact that I did eat me some tofu today, and it was tasty!

The type of tofu I tried is called Shirataki.  Not to be confused with shiitaki mushrooms.  Shirataki is tofu shaped spaghetti noodles.  Actually, shiitaki mushrooms and shirataki tofu do have something in common - my hubby won't eat either!

I have several recipes which use shirataki, and the first step is to drain and rinse the noodles.  Once that was done, I decided to take the plunge.  I plucked a noodle from the strainer and gave it a try.  The consistency, taste, and texture was like pasta!  Crazy!  I know!

Here's were it gets really crazy!  Let's compare nutrition.  Four ounces of pasta contains 111 calories and 1 gram of fat.  Four ounces of Shirataki has just 20 calories and 1/2 gram of fat!

There's one problem with the shirataki - finding them.  I have looked in several Giant Eagles and Krogers without success.  If a store carries them, they should be with the tofu.  The only place I have found them is the Giant Eagle Marketplace in Upper Arlington only they were not with the tofu.  They were with the cheese.

Coming soon, I'll share the recipe I made with the shirataki; but for now, I'll leave you with the tempting picture. Mmmm, they were soooo good!
